The travels of Paola Castañeda, the prodigious pastry chef: “Colombia will always be my home and it is where I feel completely myself”

From journalist to pastry chef. This has been the Colombian’s career Paola Castaneda, who trained in Alicante alongside maestro Paco Torreblanca. During his college years he had flirted with baking, selling sweets and brownies to get extra money. At the Torreblanca School he met the Mexican Jimena Rubio, who did not hesitate to embark with her on her new adventure: the workshop of Annapurna Cakes, which opened in June 2022 in Madrid. They make cakes (balanced in sugar), sponge cakes, brownies or roscones during the Christmas season.

Orlando and its theme parks.

It may sound obvious, but it’s food. I remember an order from my father, who asked me to take salted cod to Colombia, since it is not available there, to remember the food they gave him on the ship when he was a sailor.

As a good friend says, nothing is missing except a passport, money and a swimsuit.
